Desilicious Kitchen is one stop for all gluten free vegetarian foods from India. Though our recipes are gluten free , they are universal in appeal and use. We’re here with a delicious recipe of baingan bharta or roasted eggplant that can instantly make your loved ones fall for vaangi or eggplant. Eggplant/aubergine/ brinjal/baingan – 2 no. or 800 gms
Tomatoes – 4 no. or 400 gms
Onions – 3 no. or 200 gms
Ginger – 15 gms or 1.5 tbsp when sliced
Garlic cloves – 25 gms or 12 cloves (mostly big ones)
Coriander seeds – 1.5 tbsp (to be crushed)
Red chillies – 4 no. or 8 gms
Coriander powder – 2tsp
Red chilli powder – 1/2 tsp
Turmeric powder – 1/2 tsp
Aamchoor powder or dry mango powder – 1 tsp
Dry fenugreek leaves or kasoori methi – 1 tbsp
Green chillies – 3 no. or 20 gms
Juice of 3 big lemons (1/4th cup)
3 tbsp chopped coriander leaves
