Today I am sharing with you my buckwheat recipe. Buckwheat is as popular in Ukraine as rice is in the USA. I used to eat buckwheat almost everyday when I lived in Ukraine. Since it is not very popular in the USA I would like to introduce it to you today. A lot of healthy meal plans targeting the weight loss include this amazing grain. 1 cup of cooked buckwheat has 155 calories compare to: 1 cup of cooked white rice – 206 calories, 1 cup of cooked quinoa – 222 calories, 1 cup of lentils – 222 calories. For those who are trying to loose weight and tired of eating rice, quinoa, whole wheat pastas every day, buckwheat is the best choice.

I would always pick kasha ( roasted whole grain kernels over raw) because it has so much flavor and has a great texture. Raw buckwheat will be better option for salads, smoothies, and for sure sprouting .
For 1 cup of Buckwheat kasha ( roasted kernels) you will need:
1 3/4 cups of boiling water
1-2 bay leaves
1/2 tsp vegetable bouillon (optional)
Salt by taste
Butter or olive oil by desire
Poor 1 3/4 cups of boiling water over 1 cup of buckwheat, add bouillon, bay leaf, salt. Cook on low heat till the water is absorbed, take of the heat, leave covered 5-10 min before serving.
Enjoy as main dish or as a side for your meats or vegetables .
