These chickpea chocolate chip cookies will amaze you. They are soft, moist and chewy not to mention delicious. Even though these do not contain flour or eggs, you will hardly be able to tell.

Chickpea Chocolate Chip Cookies Recipe
These quick garbanzo bean (chickpea) cookies are gluten free and so easy to make. The dough can also be easily frozen so you can have a delicious dessert any time.
½ cup cashew butter
1 can (15 oz.) garbanzo beans, drained, rinsed, and dried
1 tsp. Vanilla extract
¼ cup honey
¼ tsp. Baking soda
1 tsp. Baking powder
1 ¼ cup milk chocolate chips, Guittard is my favorite brand
2 pinches of salt
Preheat oven to 350 degrees F.
Place all the ingredients except the chocolate chips into a food processor and blend until everything is well combined and smooth.
Fold in the chocolate chips. You can refrigerate the dough if you wish to firm up the dough but is not necessary.
Drop dough onto a lined cookie sheet using a tablespoon. Press the dough down a little as the dough does not spread out when cooking.
Bake the cookies at 350 degrees F. for 15 minutes and the bottom of the cookies are a golden brown.
