Masala for Masala Dosa by Desilicious Kitchen

Potatoes 500 grams / 5 small and medium sized mixed
Onions 4 400 grams
Gibger 1 inch piece 15 grams
Green chillies 5 20 grams
Red chilli 1
Oil 2 tbsp
Mustard seeds /Rai 1 tsp
Jeera 1/2 tsp
Chana dal / Bengal gram2 tsp
Urad dal / black gram 2 tsp
Curry leaves 1tbsp
Cashew nuts 2 tsp ( optional)
Lemon juice 1 tbsp
Coriander leaves 2 tbsp

Wash boil peel and mash the potatoes.
Slice the onions thin
Heat oil in a pan.
Add mustard seeds. When the mustard seeds crackle add jeera.
Add chana dal. Sauté for half a minute on a low flame.
Add urad dal, when urad dal turns Color add cashew nuts. Sauté for about 2 minutes on a very low flame. Add ginger, green chillies, red chilli, curry leaves.
Add onions. Sauté. Add turmeric powder. Salt. Mashed potatoes. Water. Stir. Cover and cook for 2 minutes. Open lid. Stir for a couple of minutes. Switch off flame. Add lemon juice . Add coriander leaves.
