Methi Muthiya | Fenugreek Leaves Fritters | Desilicious Kitchen

Methi muthiya or fengreek leaves fritters are made from fresh fenugreek leaves. These are typically made by adding wheat flour and chickpeas flour to the chopped methi or fenugreek leaves. But as our we post gluten free recipes we have entirely substituted the wheat flour with chickpeas flour and added very little rice flour to it. But the taste of the muthiyas has not been compromised by this. If anything these fritters are irresistable. These fritters can be had as is like a tea time snack. But this Gujarati recipe has an important role in another famous Gujarati recipe called undhiyu. These are added to undhiyu which is a mixed vegetable recipe made with awesome fresh winter vegetables an d to which spices and herbs are added.
Fenugreek leaves 500 grams
Besan / chickpeas flour 500 grams
Rice flour 3 tbsp
ginger paste 1 tbsp
green chilli paste 1 tbsp
garlic paste 1 tbsp
sugar 2 tsp
Coriander leaves chopped 3 tbsp
Green garlic laves and pods 3 tbsp(optional)
Lemon juice 2 tbsp
oil to fry
